Eleven courses. Fourteen seats at the counter. One kitchen in pursuit of the exact moment a dish becomes memory.
The Plates
The Chef
"A dish is finished when nothing can be taken away. We cook with fire because fire does not negotiate."
Trained under three-star kitchens in Lyon and Copenhagen, Elena returned home to build a counter where every course is finished within arm's reach of the guest. Her cellar holds 1,200 labels; her garden, forty rows of heritage vegetables.
Private Dining
A candlelit vault beneath the dining room, walled by 1,200 labels and poured by our head sommelier.
A private counter inside the kitchen itself — the tasting menu narrated course by course by Elena's brigade.
The Guest Book
"The truffle course was shaved at the table in complete silence. Nobody breathed. That is theatre no stage can buy."
"We flew in for one dinner and it justified the trip twice over. The duck alone deserves its own postcode."
"I have eaten at thirty starred restaurants. Éclat is the first where the pairing told the same story as the plates."
